I can’t quite recall where I found this recipe–but it’s simply fabulous!
I have been in and out of the gluten-free arena lately…and this recipe is gluten free.
I don’t really measure…or anything like that. Preheat the oven to… 350 degrees–I think or so. You take a nice bowl and put in some rolled oats–however much you desire to make (3-4 cups or so…). Add 1 generous tbsp of cinnamon and mix it all around with the oats.
Melt 1 to 1 1/2 tbsp coconut oil. Once melted add 1/3 c honey and stir. Pour into the oats and cinnamon and mix until oats are well coated. Spread out the mixture on a baking sheet lined with parchment paper. Bake for 25-30 minutes.
With about 10 minutes of baking left add 1/2 cup (or so) of sliced almonds and 2-3 tbsp (or so) of ground flax seed over the top of the oats.
Remove and let cool. Store in air tight container, et cetera, et cetera.
